– 1-1/4 cup self-raising-flour
– 1/2 cup of sugar
– 2 stick of butter butter at room temperature
– 3 eggs at room temperature
– 5 tablespoons of Sonoma Farm Blood Orange Olive Oil
Step 1: Grease a muffin tin. Beat the sugar and the butter until creamy.
Step 2: Add the eggs one by one and combine well at each adding. Add the blood orange olive oil, combine well.
Step 3: Fold in the flour and combine well using a wooden spatula. Pour the batter into a muffin tin.
Step 4: Bake at 180C for 20 to 25 minutes or until set.
