Pan Seared Scallops with Lime Infused Olive Oil Recipe
-1 sea scallop (2.5- 3.0 oz) rinsed and drained
-2 tablespoons of Sonoma Farm Lime Infused Extra Virgin Olive Oil
-1/2 of a ripe avocado, peeled and sliced into wedges
-4 leaves of cilantro finely chopped
-Kosher salt and fresh ground pepper
Lightly season cleaned and dried scallop with a dash of Kosher salt and fresh ground pepper. Heat 1 tablespoon of lime infused extra virgin olive oil in a small skillet over medium high heat. Place scallop in pan with heated olive oil that should be sizzling, cover and sear for 4 minutes. Turn, cover, and cook for an additional 4 minutes. While scallop is searing, fan out sliced avocado onto a small serving dish. Once scallop is cooked, remove from skillet. Place on top of fanned avocado and drizzle with remaining lime infused oil in the skillet. Garnish with chopped cilantro leaves. Lightly sprinkle 6 granules of Kosher salt over the top to make the whole dish pop. The avocado and lime infused olive oil complement each other perfectly!
