Garlic Oil Fried Eggplant Recipe

  • 7 tablespoons Sonoma Farm Garlic Oil 
  • 1 large eggplant, peeled and sliced
  • eggs, beaten
  • 2 cups dry breadcrumbs
  • 1/4 cup parmesan cheese
  • salt


  1. Warm oil in a large skillet over medium-high heat.

  2. Dip eggplant slices in egg, then coat with breadcrumbs.

  3. Place breaded eggplant in the hot oil and fry until golden brown, 2 to 3 minutes per side. Drain on paper towels.

  4. Sprinkle with parmesan and salt to taste
  5. Service with Sonoma Farm Pasta Sauce
